About Us

The History is a forthcoming cultural-gastronomic venue in Midtown Manhattan that reframes three millennia of Georgian food heritage within a contemporary New York context. Operating as a fusion kitchen, the restaurant will apply modern culinary science and local sourcing to reinterpret canonical Georgian techniques and dishes, thereby demonstrating the interaction of continuity and innovation in a thoughtfully curated cultural and educational environment.

The interior functions as an instructive gallery.  Portrait engravings of major Georgian monarchs—Tamar, David IV, Giorgi V, and others—are integrated into wall panels executed with archival pigments.  A back-lit topographic map of Georgia occupies the east wall, providing spatial and historical orientation.  Accurate replicas of royal and noble garments are presented in freestanding vitrines, each accompanied by bilingual explanatory labels that summarize period, material, and ceremonial use.  Three historical iterations of the Georgian alphabet—Asomtavruli, Nuskhuri, and Mkhedruli—are rendered in metal inlay along a feature wall and across the bar counter, establishing a visual chronology of linguistic development.  Additional walls display high-fidelity reproductions of significant museum artifacts; public-friendly and informative captions outline provenance, era, and cultural relevance. Tableware extends the didactic program: porcelain plates are laser-inscribed with aphorisms from The Knight in the Panther Skin, integrating literary heritage into the dining sequence.

A subsidiary performance platform accommodates nightly jazz and blues ensembles, creating an aural analogy between Georgia’s Silk-Road cosmopolitanism and New York’s improvisational culture.  The beverage program offers the largest Georgian wine collection in the United States, curated by certified sommeliers who present varietal lineage, terroir, and vinification method with scholarly precision.  Front-of-house personnel receive cross-training in food history, enology, and public speaking so that each service interaction fulfills both functional and educational objectives.

Through research-based design, live performance, and high-standard hospitality, The History will operate not merely as a restaurant but as a living institute of cultural diplomacy, supporting New York City’s strategic aim to foster international intellectual and gastronomic exchange.  Opening is scheduled for Summer 2025.
